1. Preparation of dosa

A simple dosa is prepared from black lentils (urad daal) and rice. The batter for the dosa is carefully prepared by soaking the rice and lentils. There are many varieties of dosas available, such as Mysore masala dosa, set Dosa, Ragi dosa and whole wheat Dosa.
The traditional method of making Dosa involves soaking the lentils and rice, then making them into a batter and leaving it to ferment overnight. When the batter increases in volume and gets airy, it forms small bubbles, which hints that the batter is ready. The batter is spread on a hot pan and cooked with a little ghee or oil until it takes a golden brown colour.
